"ESCRITA” WITH POTATOES AND BEANS
INGREDIENTS:
- 1 kg of “escrita”.
- 1 kg of potatoes.
- 4 cloves of garlic.
- A glass of oil.
- ½ glass of white wine.
- 1 teaspoon of red pepper.
- A chilli.
- 400 grs of boiled beans.
- A sprig of parsley.
- A slice of bread.
- Red dried pepper.
- A tomato.
- Salt to taste.
- ½ liter of water.
Put water in a saucepan to heat until it boils. Once it arrives, turn off the heat and add the “escrita”, leaving it for ten minutes with the hot water. On the other hand, we will start making the fry. Put the oil in a saucepan, once hot, fry the slice of bread, the garlic and the chilli, when it is toasted, remove and set aside. Add the garlic, bread, chilli, parsley, red pepper and salt in a mortar and grind everything. Once grinded, add the tomato and also mix it.
We will put the oil back to heat and add half of the minced, fry it and add the wine, when the wine has evaporated, add the water, together with the sliced potatoes and add the other half of the minced that we had reserved.
We will bring it to the boil and let it boil for about ten minutes, then we will add the beans and the “escrita”, we will let it boil over medium heat for another ten minutes.
Add salt to taste, and it’s done!
