FISH BROTH WITH "GALERES"

RECIPE FOR 4 PEOPLE:
- 8 "galeres".
- 4 monckfish tails.
- “2 jurioles (rafets, lluernes)”.
- 1 mackerel.
- 3 cloves of garlic.
- Parsley.
- 1 dried red pepper.
- 1 tomato.
- Sal.
- Red pepper.
- ½ drop of wine.
- 100 ml of olive oil.
- ½ water.
We will add the oil to the pan and cook the "galeres", we will fry them a little bit, not too much. When you're done we'll set it aside and leave it on a single plate. In a mortar we will chop the garlic, add the salt, the red dried pepper, the parsley and the tomato. When we have everything finally chopped and mixed, we will fry it in the pan with the oil from the "galeres" and add the wine. Once everything is reduced we will add the water and hope that starts to boil. When it does, we will add the fish and, on top, the "galeres". Let it cook for about 12 minutes until it melts into a fish broth.
