BLUEFIN TUNA STEW WITH MUSHROOMS

BLUEFIN TUNA STEW WITH MUSHROOMS

INGREDIENTS TO MAKE THE TUNA STEW FOR 4 PEOPLE:

  • 4 red tuna loin fillets.
  • Flour
  • 12 small or grated onions, not crushed.
  • Mushrooms or vegetables to taste (peas, carrots...)
  • A glass of white wine.
  • Olive oil.
  • Sal.
  • White pepper.
  • Nutmeg.

To start making this red tuna stew, we will flour the tuna and cook it in the pan with a little oil.

Remove the tuna and fry the onions over low heat. Once the onions have changed colour and are almost transparent, add a pinch of salt, a pinch of white pepper and a pinch of nutmeg. Add the mushrooms or vegetables to taste and add the tuna and a generous glass of white wine. If the vegetables are not quick-cooking, we will scald or cook them first. Cover and leave it on a gentle heat for 5 minutes so that all the ingredients are incorporated.
