Recipe: Galleys with onion and tomatoe
INGREDIENTS
- 1 kg of galleys.
- 4 onions.
- 3 tomatoes.
- 5 or 6 garlics.
- ½ glass of white wine.
- Salt and pepper.
- A chilli (optional).
- ½ glass of olive oil.
- A pinch of sugar.
First of all we will put the galleys under the water and clean them well. Put the oil in a pan to heat and when it has done, add the unpeeled whole garlics, with a cut. We will fry them, not so much time, just a little bit for them to give us a little taste. When they are a little cooked, remove them and set aside. Add the chopped onion and cook it (those who like it can also add a chilli to give it a spicy kick). After a while we will add the grated tomato. When it begins to take on colour, add the galleys and half a glass of white wine. We will add salt and pepper to taste and also a little sugar so that the sauce is not so acidic. Let it reduce and it will be ready to soak bread.
